What You’ll Need (Serves 4)
Ingredients:
2 tbsp olive oil
1 tbsp butter
2 large leeks, sliced thinly (white and light green parts only)
2 garlic cloves, minced
1½ cups arborio rice
4 cups hot vegetable or chicken stock
¾ cup grated Gruyère cheese
Salt and black pepper, to taste
Optional: fresh thyme, crispy sage leaves, or toasted walnuts for garnish
How to Make It
Prep the Base:
In a large, heavy-based pan, heat the olive oil and butter over medium heat. Add the sliced leeks and a pinch of salt. Sauté gently for 6–8 minutes until softened and sweet but not browned.
Build the Flavour:
Add the minced garlic and cook for another minute. Stir in the arborio rice and toast for 1–2 minutes until the edges become slightly translucent.
Add the Wine:
Pour in the Sauvignon Blanc and let it simmer, stirring continuously, until the wine has mostly absorbed. This is where the flavour magic starts.
Stir, Sip, Repeat:
Begin adding the hot stock, one ladle at a time, stirring frequently. Allow each addition to be mostly absorbed before adding the next. This should take around 18–20 minutes total.
Finish with Cheese:
Once the rice is tender with a slight bite and the consistency is creamy, stir in the grated Gruyère. Season with salt and pepper to taste.
Serve Warm:
