Creamy White Wine Chicken with Mushrooms

A Simple Dish Made for Sharing
Cooking with wine is one of the easiest ways to bring depth and balance to a dish, and BC Blanc de Blanc is a perfect partner in the kitchen. Its bright, crisp character helps lift the flavours of savoury ingredients while adding a gentle richness to sauces.
This creamy white wine chicken with mushrooms is comforting without being heavy, making it ideal for relaxed dinners, family meals, or occasions where good food and good company come together.
Ingredients
Serves 4
4 chicken breasts or thighs
1 tablespoon olive oil
1 tablespoon butter
1 small onion, finely chopped
2 cloves garlic, minced
250 g mushrooms, sliced
125 ml BC Blanc de Blanc
200 ml fresh cream
125 ml chicken stock
1 teaspoon fresh thyme (or ½ teaspoon dried thyme)
Salt and black pepper to taste
Fresh parsley, chopped (for garnish)
Optional sides: Steamed rice, roasted potatoes, or crusty bread
Method
Prepare the chicken
Season the chicken with salt and black pepper.
Brown the chicken
Heat the olive oil and butter in a large pan over medium heat. Add the chicken and cook until golden on both sides. Remove from the pan and set aside.
Cook the mushrooms and onion
In the same pan, add the chopped onion and cook until softened. Add the garlic and mushrooms and cook for 5 to 6 minutes until the mushrooms begin to brown.
Deglaze with wine
Pour in the BC Blanc de Blanc and allow it to simmer for 2 to 3 minutes. This helps lift the flavours from the pan while creating the base of the sauce.
Create the sauce
Add the chicken stock, cream, and thyme. Stir gently and allow the sauce to simmer for a few minutes until it begins to thicken.
Finish the dish
Return the chicken to the pan and cook for another 8 to 10 minutes until the chicken is fully cooked and the sauce has thickened slightly.
Serve
Garnish with fresh parsley and serve with rice, roasted potatoes, or warm bread to soak up the sauce.
