Slow Cooked Beef Stew with BC's Cabernet Sauvignon

When the temperatures drop, few things are as comforting as a hearty slow-cooked stew. This recipe combines tender beef, seasonal vegetables, and BC's Cabernet Sauvignon to create a rich, flavourful dish perfect for cosy winter evenings.


Why Cabernet Sauvignon?

With notes of dark berries, coffee, and chocolate, BC Cabernet Sauvignon adds depth and complexity to the stew, helping to create a rich sauce that develops beautifully during slow cooking.


Ingredients

Serves 6

  • 1 kg beef chuck, cut into large cubes

  • 2 tbsp olive oil

  • 2 large onions, diced

  • 3 cloves garlic, crushed

  • 3 carrots, sliced

  • 2 celery stalks, sliced

  • 250 g button mushrooms, halved

  • 2 tbsp tomato paste

  • 500 ml BC's Cabernet Sauvignon

  • 500 ml beef or mushroom stock

  • 2 tsp Worcestershire sauce

  • 2 bay leaves

  • 2 sprigs fresh rosemary

  • 1 tsp dried thyme

  • Salt and black pepper to taste

  • 2 tbsp cornflour (optional, for thickening)

  • Fresh parsley for garnish


Method

Step 1: Brown the Beef

Heat the olive oil in a large pan over medium-high heat.

Brown the beef in batches until coloured on all sides. Transfer to your slow cooker.


Step 2: Build the Flavour Base

In the same pan, sauté the onions for 5 minutes until softened.

Add the garlic and tomato paste and cook for another minute.

Pour in the Cabernet Sauvignon, scraping up any browned bits from the bottom of the pan. Simmer for 2 to 3 minutes.


Step 3: Assemble

Add the onion mixture to the slow cooker along with the carrots, celery, mushrooms, beef stock, Worcestershire sauce, herbs, salt, and pepper.

Stir gently to combine.


Step 4: Slow Cook

Cook on:

  • Low for 8 hours, or

  • High for 4 to 5 hours

The beef should be fork-tender and the vegetables soft.


Step 5: Finish the Sauce

If you'd like a thicker stew, mix the cornflour with a little cold water and stir it into the stew during the final 20 minutes of cooking.

Remove the bay leaves and rosemary stems before serving.
