Creamy Chardonnay Pasta with Garlic & Parmesan

There’s something magical about cooking with wine; it transforms a simple dish into something elegant and memorable. This creamy pasta recipe uses BC Chardonnay, with its rich, buttery notes and hints of tropical fruit, to create a velvety sauce that clings beautifully to every strand of pasta.
Whether it’s a cosy night in or a dinner to impress, this recipe is quick, comforting, and oh-so-satisfying.
Ingredients (Serves 4)
400g pasta (tagliatelle, fettuccine, or penne work well)
2 tbsp butter
2 tbsp olive oil
4 cloves garlic, minced
1 small onion, finely chopped
200ml BC Chardonnay
250ml heavy cream
100g Parmesan cheese, grated (plus extra to serve)
1 tsp lemon zest
Salt and freshly ground black pepper, to taste
Fresh parsley, chopped (for garnish)
Optional:
200g sautéed mushrooms, prawns, or grilled chicken for added protein
Method
Cook the pasta: Bring a large pot of salted water to the boil and cook pasta according to packet instructions until al dente. Reserve ½ cup of pasta water, then drain.
Build the flavour base: In a large skillet, heat butter and olive oil over medium heat. Add onion and cook until soft and translucent. Stir in garlic and cook until fragrant.
Add the Chardonnay: Pour in the BC Chardonnay, allowing it to simmer for 2–3 minutes. This reduces the wine slightly and infuses the sauce with its buttery, tropical flavours.
Creamy finish: Lower the heat and stir in the cream. Add Parmesan and whisk until smooth. Season with salt, pepper, and lemon zest. If the sauce feels too thick, loosen it with a splash of reserved pasta water.
Toss and serve: Add the drained pasta to the skillet and toss until well coated. Garnish with fresh parsley and extra Parmesan before serving.
Tip: Switch things up by adding prawns for a luxurious seafood version, or grilled chicken for a hearty, comforting twist.
